Commercial kitchen exhaust is expected to capture cooking smoke, heat, vapor, and grease-laden air at the hood. When that behavior changes, grease accumulation may be one possible cause—but it is not the only one. Filter condition, fan performance, belts or controls, makeup air, building pressure, duct conditions, and changes to the cooking line can also affect capture.

Changes that deserve investigation
Compare the system with its normal operation. Relevant changes can include:
