Hood filters are the first removable part of many commercial kitchen exhaust systems, so they receive frequent attention. They help capture grease as exhaust air moves toward the plenum and duct. Keeping them maintained matters, but a washed set of filters does not establish that the hood, ductwork, or exhaust fan is clean.
Inspect condition as well as appearance
Follow the manufacturer’s instructions and the kitchen’s shutdown procedures before removing filters. Allow hot surfaces and equipment to reach a safe condition. During handling, check for:
- Heavy or uneven grease loading
- Bent frames, separated parts, or sharp damage
- Missing filters or gaps across the filter bank
- Filters that do not seat correctly in the rack
- Incorrect orientation after prior removal
- Grease collecting in the channel behind or below the filters
A filter that is structurally damaged or unsuitable for the system may need replacement through the appropriate equipment source. Cleaning does not repair a bent frame or make the wrong filter fit.
Use a controlled cleaning process
The appropriate method depends on filter type and manufacturer directions. Kitchen staff should avoid mixing chemicals, using products without label guidance, or leaving residue that can return to the cooking environment. Clean filters should be rinsed as required, allowed to drain or dry appropriately, and reinstalled in the correct position.
Record which filter set belongs to which hood when a property has more than one system. Do not operate an exhaust system with filters intentionally missing unless an authorized professional has confirmed a proper arrangement.
Look behind the filters
Filters do not capture every deposit. Grease can accumulate in accessible hood surfaces, the plenum, ducts, and fan. If filters become heavily loaded soon after cleaning, do not automatically conclude that the filters are the only problem. Cooking volume or method may have changed, a filter may be damaged or incorrectly installed, or the wider exhaust system may need inspection.
Smoke-capture or airflow concerns can also involve mechanical or makeup-air conditions. Hood cleaning is not a substitute for diagnosis or repair by the appropriate qualified professional.
Do not turn an inspection interval into an automatic cleaning claim
NFPA 96 establishes inspection intervals for different cooking operations. Those intervals are not a statement that every filter or system must be cleaned on exactly the same calendar. Cleaning frequency should reflect observed grease or contamination and applicable authority and insurer requirements.
A kitchen can maintain filters between professional services while still arranging the required inspection and addressing contamination elsewhere in the exhaust path. Keep filter-maintenance notes with the system records so changes are easier to identify.
Include filters in a defined exhaust-cleaning scope
For an estimate, provide the hood length, filter type and count, cooking equipment, system access, current condition, service history, and photos when available. Clarify whether filter cleaning, replacement coordination, or only the larger exhaust-cleaning scope is being requested.
